Welcome to Tasty Tuesday at Things to Do In New Jersey!
Cool, crisp fall weather has arrived in New Jersey, and so have juicy, delicious, Jersey Fresh apples! All around the Garden State, apple orchards are teaming with wonderful, crispy apples. My family went apple picking the other day at our favorite pick-your-own apple farm and I decided to make this yummy Apple Cinnamon Bundt Cake before my boys devoured all those apples (with three growing boys, it doesn’t take long!). This is one of our family’s favorite cakes – it smells amazing while it’s baking, and it tastes even better! Just look at all the chunks of apples packed into this slice – doesn’t it look delicious?

Here’s the recipe…
Apple Cinnamon Bundt Cake
4 cups chopped apples (chop into about ½ inch pieces)
1 cup chopped nuts (totally optional- not everyone in our house likes them so I skipped them)
1-1/2 cups sugar
3 cups all-purpose flour
2 tsp. baking soda
½ tsp. salt
2 tsp. cinnamon
½ tsp. nutmeg
½ cup vegetable oil
½ cup milk
2 eggs, beaten
1 tsp. vanilla extract
Confectioner’s sugar for dusting
First off, I’ll let you in on a little secret… I am a lazy baker. I hate peeling fruit. Ain’t nobody got time for that. And I’ve discovered that – most of the time – you don’t need to do it. So skip it. Nobody will notice. Just slice and chop those apples. You’re welcome!
Mix together the apples, nuts (if using) and sugar in a mixing bowl; let stand for 30 minutes. Stir occasionally. The sugar will draw out the juices of the apples.
Preheat your oven to 350° F and grease a bundt pan.
In a separate bowl, sift (I just use a whisk) together the flour, baking soda, salt, cinnamon, and nutmeg. Add the apple mixture, oil, milk, eggs, and vanilla extract. Mix well. Pour the batter into the greased bundt pan and bake for approximately one hour.
Allow the cake to cool completely, then dust with confectioner’s sugar. Enjoy!
