Welcome to Tasty Tuesday at Things to Do In New Jersey!
One of my favorite things to do when I’m out and about in New Jersey is to stop at the local farmers’ market and pick up some delicious Jersey Fresh produce. I was in the Trenton area yesterday, so I visited the Trenton Farmers’ Market and came home with the most wonderful, juicy, fresh Jersey peaches and a HUGE cantaloupe that was just at the peak of ripeness. Today, I used some of the peaches and cantaloupe to make this Peach Cantaloupe Salsa. It has a great combination of spicy and sweet flavors that makes it a great accompaniment to grilled chicken, fish, or shrimp, or just some nice, crispy tortilla chips. Try it for yourself!
Sweet & Spicy Peach Cantaloupe Salsa
2 cups fresh peaches, coarsely chopped
1 cup cantaloupe, coarsely chopped
¼ cup diced red onion
2 Tbsp. lime juice
1 Tbsp. fresh mint leaves, coarsely chopped
1 small jalapeño pepper, finely chopped – seeds and ribs removed
Mix all of the ingredients together in a bowl. Cover and refrigerate several hours to allow the flavors to blend prior to serving. (Note: If you like your salsa extra-spicy, mix in some of the jalapeño seeds as well.)
